Jollof Pasta

A Nigerian classic reimagined: smoky tomato-pepper base, scotch bonnet warmth and al dente Q1 Pasta spaghetti.

Ingredients

  • · 400g Q1 Pasta spaghetti
  • · 4 ripe tomatoes, blended
  • · 1 red bell pepper (tatashe), blended
  • · 1 scotch bonnet (ata rodo), to taste
  • · 1 large onion, sliced
  • · 3 tbsp groundnut or vegetable oil
  • · 2 tsp curry powder, 1 tsp thyme, 2 bay leaves
  • · 500ml chicken or vegetable stock
  • · Salt and seasoning cube to taste

Method

  1. 1. Fry the onions in oil until translucent, then add blended tomato-pepper base and simmer 10 minutes until oil rises.
  2. 2. Stir in curry, thyme, bay leaves and seasoning; cook 2 minutes to bloom the spices.
  3. 3. Add stock, bring to a gentle boil, then add uncooked Q1 spaghetti broken in half.
  4. 4. Cover and cook on low heat 12–14 minutes, tossing occasionally, until pasta is al dente and sauce coats every strand.
  5. 5. Rest 3 minutes off the heat. Serve with fried plantain or grilled chicken.

Nigerian Spaghetti Stew

The everyday classic — rich pepper stew tossed through long strands of Q1 Pasta spaghetti.

Ingredients

  • · 400g Q1 Pasta spaghetti
  • · 3 tbsp palm or vegetable oil
  • · 300g minced beef or chopped chicken
  • · 300ml Nigerian pepper stew (ata din din)
  • · 1 onion, diced; 2 cloves garlic
  • · Curry, thyme, seasoning cube, salt

Method

  1. 1. Cook Q1 spaghetti in salted water until al dente; drain and reserve a cup of pasta water.
  2. 2. Sauté onion and garlic in oil, add protein and brown well.
  3. 3. Add pepper stew, spices and a splash of pasta water; simmer 10 minutes.
  4. 4. Toss spaghetti through the stew until every strand is coated. Finish with fresh basil.

A weeknight favourite — Q1 Pasta macaroni bathed in a peppery, saucy blend with sausage and vegetables.

Ingredients

  • · 400g Q1 Pasta macaroni
  • · 4 sausages, sliced
  • · 2 tomatoes + 1 tatashe + ½ scotch bonnet, blended
  • · 1 carrot, 1 green pepper, diced
  • · 1 onion, curry, thyme, seasoning

Method

  1. 1. Boil Q1 macaroni until al dente; drain.
  2. 2. Fry onions and sausage, add blended pepper mix and reduce for 8 minutes.
  3. 3. Stir in diced vegetables and spices; cook 3 minutes.
  4. 4. Fold in macaroni and toss until glossy. Serve hot.

Creamy Suya Pasta

Northern Nigerian suya spice meets a silky cream sauce over Q1 Pasta penne — smoky, nutty, unforgettable.

Ingredients

  • · 400g Q1 Pasta penne
  • · 400g chicken breast, cubed
  • · 2 tbsp suya spice (yaji)
  • · 200ml cooking cream
  • · 1 onion, 2 cloves garlic
  • · Handful of spring onions

Method

  1. 1. Toss chicken in suya spice; sear in a hot pan until caramelised.
  2. 2. Add onion and garlic, then pour in cream and simmer 3 minutes.
  3. 3. Fold in cooked Q1 penne, adjust seasoning, finish with spring onions and extra suya dust.
